In Irish, Scottish, Icelandic and Scandinavian folklore, the Selkie is a woman of the ocean who lives inside a seal skin. When she comes up to the rocks, she slips out of her skin or shapeshifts, to dance or bask in the sun. If a man steals her skin while she sleeps, she is forced to become his wife and live on land. We say that whiskey shapeshifts as well to both in its creation and the unique visions as you drink it. This whiskey features Washington White Winter Wheat grown by my sister Jill and her husband Stan on their farm just outside of Reardan, Washington. We brought in a ton (2000 pounds) of wheat to make this whiskey. Wort is the liquid extracted from the mashing process during the brewing of beer or whiskey. This was done for us at Mount Olympus Brewing because we don’t have the equipment to do the mash. We then hauled the liquid here in a tote where the winemaking team fermented it into beer in the winery. That was then transferred in bond for distillation.
